- 1/4 cup nonfat dry milk
- 3 tablespoons granulated sugar
- 1 teaspoon salt
- 1 tablespoon instant yeast
- 3 eggs, plus 1 egg yolk, beaten together (egg white reserved)
- 1/4 cup of lukewarm water
- 5 ounces of unsalted butter
Step by Step Directions for Brioche Dough
- Have all the ingredients ready.
- Use a stand mixer with a dough hook, and mix all the ingredients on low speed for 10 minutes, until the dough is smooth and elastic. This process can take up to 15 minutes. As an alternative, a bread machine can be employed to knead the dough. Give it time to go through its full cycle before transitioning to the next step.
- Combine all the ingredients to form a round ball, then coat it in oil on every side. Cover and let sit at room temperature for 45 minutes so it can take on its distinctive flavor. Refrigerate for no less than 8 hours or overnight – leaving it out any longer than 12 hours is not recommended!
- Preheat the oven to a temperature of 400F. Place your brioche inside, and bake it for 10 minutes before turning down the heat to 350F without opening the door. Continue baking for an additional 30 minutes until a digital thermometer reads 190 F, signifying that your delicious bread is complete! If your brioche starts to brown too quickly before it is cooked through, protect it from burning by covering it with foil. You can also try baking the bread in 12 muffin tins for 20 to 25 minutes until a toothpick inserted into the center comes out clean.
- After 10 minutes for the large brioche loaf and 5 minutes for its rolls, carefully transfer them to an elevated cooling rack. For optimal flavor and texture, it’s best consumed slightly warmly or at room temperature on the first day!
