I received Morning Pep Coconut Flour to try out. I’ve never used Coconut Flour for anything but I’ve heard many benefits to cooking with it. So I tried a couple recipes. My son absolutely loves baking.
I try to bake somewhat healthy most of the time but I am not one of those mothers that cooks only vegan, vegetarian or gluten free. I try to find balance with buying some organic and using Greek yogurt, brown sugar, real fruit and whole wheat flour in some of my recipes. I am health conscious but I don’t buy ALL organic and we have many different palettes in our house. So when I found this recipe for Paleo Coconut Chocolate Bars I had to adjust it. But also, knowing how dense the flour is when baking with it, I wanted to experiment. So my Paleo Coconut Chocolate Bars became UnPaleo Coconut Chocolate Muffins. Instead of coconut milk, I used whole milk simply because that is what I had on hand. Instead of coconut oil, I used Canola oil. I replaced Agave with sugar. I used regular chocolate chips and added a heaping spoonful of Greek yogurt. Finally, I threw in a handful of oats, just because I was feeling really adventurous. I scooped them into a mini muffin pan (greasing with olive oil spray).
They came out delicious, light and fluffy and my son and husband loved them.
So what is the big deal about Coconut Flour?
