The best thing about soup too is that you can freeze it for later and with my busy life, it helps to just grab something out of the freezer for dinner once in a while. So, here is an easy recipe for Keto Chicken Enchilada Soup. It’s got heavy cream and cream cheese, which is perfect for the Keto diet. If you like jalapenos, your love this recipe!

Keto Chicken Enchilada Soup
Keto Chicken Enchilada Soup is a simple recipe. Chop all peppers, onion, and jalapeno. Sauté in 2 tablespoons of olive oil for about 5 minutes till tender.
Add paprika, garlic powder, and pepper to veggies and stir.
Add can of Rotel and diced tomato can to your mixture (do not drain liquid).
Simmer for 5 minutes before adding the rest of ingredients.
Add shredded chicken, broth, cream cheese and stir until cream cheese has melted on low heat.
Slowly add heavy whipping cream to your soup and stir. Let simmer for another 10 mins to make sure all ingredients have infused together.
Top soup with avocado and cilantro. Delish!

- 1 diced onion
- 1 diced red pepper
- 1 diced orange pepper
- 1 diced jalapeno
- 1 can of diced tomato
- 1 can of rotel
- 3 cups of shredded chicken
- 4 oz. cream cheese
- 3/4c. Heavy whipping cream
- 4 cups of chicken bone broth
- 1Tbsp. Paprika
- 1Tbsp. Garlic powder
- 1T. Black pepper
- Cilantro
- Avocado
- 2T Olive oil
Instructions

Oh my goodness, this looks like such a delicious recipe (although I would remove the chicken, or use a plant-based substitute)! With so many autumn parties coming up in the near future, this would be a great thing to make when either hosting your own, or being invited to someone else’s!
