How to Make Keto Chicken Enchilada Soup

Here is an easy recipe for Keto Chicken Enchilada Soup. Perfect for the ketogenic diet, it’s made with heavy cream and cream cheese. This is a perfect weeknight dinner recipe or a great appetizer at a barbecue. If you’re new to your keto journey, this is one of the most delirious recipes.

I love spicy food.  It started when I got pregnant, I couldn’t get enough of it.  The spicier the better!  Recently, I started the Keto diet and am trying some new things.  We’ve been hitting up barbecues lately celebrating the Holidays and they’ve been giving me some ideas on spicy food.  One thing I love but never see at a barbecue is soup.  You can count on chicken wings and spicy dips.

The best thing about soup too is that you can freeze it for later and with my busy life, it helps to just grab something out of the freezer for dinner once in a while. You don’t need to be on a keto diet or even eat low carb, this soup is for everyone. It’s a big bowl of comfort food!

Keto Chicken Enchilada Soup

This is the best keto soup that’s a simple recipe. It can be made in a large pot or pressure cooker.

Ingredients

  • 1 diced onion (you can add some green onions too)
  • 1 diced red pepper
  • 1 diced orange pepper
  • 1 diced green bell pepper
  • 1 diced jalapeno
  • 1 can of diced tomato
  • 1 can of rotel
  • 3 cups of shredded chicken – I would use skinless chicken breasts and rotisserie chicken
  • 4 oz. cream cheese
  • 3/4c. Heavy whipping cream
  • 4 cups of chicken bone broth
  • 1Tbsp. Paprika
  • 1Tbsp. Garlic powder
  • 1T. Black pepper
  • fresh Cilantro
  • Avocado
  • 2T Olive oil

Directions for Low Carb Soup

  • Chop all peppers, onion, and jalapeno. Sauté in 2 tablespoons of olive oil for about 5 minutes till tender.

  • Add paprika, garlic powder, and pepper to veggies and stir.

  • Add can of Rotel and diced tomato can to your mixture (do not drain liquid).
  • Simmer for 5 minutes before adding the rest of ingredients.

  • Add shredded chicken, broth, cream cheese and stir until cream cheese has melted on low heat.

  • Slowly add heavy whipping cream to your soup and stir. Let simmer for another 10 mins to make sure all ingredients have infused together.

  • Top soup with avocado, shredded cheese, cilantro, fat free sour cream and keto tortilla chips. Delish!

You can also add some salsa Verde and chili powder to taste.

Keto Chicken Enchilada Soup

Ingredients

  3. Oh my goodness, this looks like such a delicious recipe (although I would remove the chicken, or use a plant-based substitute)! With so many autumn parties coming up in the near future, this would be a great thing to make when either hosting your own, or being invited to someone else’s!
