The New Year will be here in days and I’ve got Keto on my mind. I know that there will be slips and lots of cheating between now and then; in fact I planned them! It’s the Holidays; a time to celebrate and with celebrating comes delicious food. So while I am celebrating, I am also preparing a menu for myself so that when I’m ready, I won’t have to fumble for Keto recipes. Preparation is key.
I will get back on track! (New Year’s Resolution).
I came up with something delicious; breakfast egg muffins, using only 3 ingredients, bacon, eggs and chives. It’s a simple as that. And they also work for Whole30, low carb diet, the Paleo diet, and are gluten free. Bonus!
It’s best to use cage free, hormone free eggs and all natural bacon without nitrates or nitrites like COLEMAN NATURAL® Uncured Hickory Smoked Bacon. This delicious no-antibiotics-ever uncured fresh pork bacon is the perfect partner to fresh eggs and make a great bacon egg cup.
Preheat the oven to 400 degrees and cook your bacon for about 8-10 minutes.
Don’t let it get crispy and don’t cook all the way. Make sure to pat them with a paper towel and remove excess grease. Add them into a silicone muffin pan and add eggs to the holes.
Cook for about 10-15 minutes.
Until they come out like this. Let them sit for a few minutes.
Keto bacon egg cups are great for breakfast, lunch or dinner and can be kept in the freezer too. Here’s the full recipe.
- 12 eggs
- 12 Slices Bacon
- 1 tbsp chives
- preheat oven to 400
- fry 12 slices of nitrate free bacon for about 10 minutes. Do not let them get crispy
- put them in a silicone muffin pan
- add 12 eggs to holes
- 1 tablespoon chives
- put them in the oven for about 12-15 minutes
- add pepper
