The New Year will be here in days and I’ve got the Keto Diet (ketogentic diet) on my mind. I know that there will be slips and lots of cheating between now and then; in fact I planned them! It’s the Holidays; a time to celebrate and with celebrating comes delicious food.

So while I am celebrating, I am also preparing a Keto menu plan for myself so that when I’m ready, I won’t have to fumble for Keto breakfast recipes. Preparation is key.

I will get back on track! (New Year’s Resolution).

I came up with something delicious; breakfast keto egg muffins, using only 3 ingredients, bacon, eggs and chives. It has simple ingredients and it’s a easy recipe for an easy breakfast! It’s also a great Keto Meal Prep item.

These low carb egg muffins work for Whole30 diet, low carb diet, the Paleo diet, and are gluten free. Bonus!

Some people make this with just egg whites, but I prefer having the egg yolks too. It’s more filling and they are good for you! Keto egg cups are also commonly made with cheddar cheese too. I’ve also heard of spinach egg muffins or adding eggs to the top of the sausage patty! The ideas are limitless!

However you decide to make these keto bacon egg muffins, they are a great keto breakfast idea.

Ingredients for Keto Egg and Bacon Cups

  • 12 eggs
  • 12 Slices of Bacon
  • 1 Tablespoon of chives
  • black pepper
  • options (bell peppers, mushrooms, onions or fresh spinach)

Instructions for Keto Bacon Egg Cups

  • preheat the oven to 400
  • fry 12 slices of nitrate free bacon for about 10 minutes. Do not let them get crispy.
  • put the egg mixture in a silicone muffin pan
  • add 12 eggs to holes add 1 tablespoon chives
  • Cook egg mixure for about 10-15 minutes.
  • add pepper
  • optional – cut up some veggies like green pepper, mushrooms, onions and add

Until the egg muffin cups come out like this. Let them sit for a few minutes.

Keto bacon egg cups are great for breakfast, lunch or dinner. But for myself, it is a healthy breakfast with simple ingredients. I like to eat them at room temperature.

Don’t forget to put them into an airtight container. em at room temperature.

You can can also store in the freezer using a them freezer bag.

Easy, delicious, gluten free, keto and low carb egg and bacon cups. You just cook the bacon for a little bit then put them in muffin pans addin;g one egg inside. Just sprinkle chives and add some pepper and bake for 12-15 minutes.
