4 Ingredient Salmon Fold It With a Kick

I have been back on the Smart For Life Diet for a couple of months now and I’ve lost 15 lbs.  So, I’m starting to incorporate healthy foods that were not on the “list” of foods I was able to eat, such as fruit.  This is considered the Maintenance Plan.  I can slowly incorporate other healthy foods, but in moderation.

While on the Smart For Life Diet, I have been eating a lot of salmon. I love salmon.  I eat it 2-3 times a week.  I could eat it every day raw if it was possible.  Then I’d lay on the couch in a happy salmon coma.  Salmon is a good source of omega-3 fatty acids, which is known to make you happy, literally.  Sticking to the diet, I usually eat it with some Brussels sprouts or other green vegetables.  But I’m craving something different.

When I went to the Blogher 2017 Conference I was introduced to many of the sponsors, one being Starkist.  They gave me some pouches, one was the Thai Chili Style Tuna, and one was the Salmon Creations® Mango Chipotle.   I was really impressed with the Thai Chili Style Tuna.  I am pretty picky about mixing flavors into my tuna but this was bold!  I really enjoyed it.  Bravo! I wanted to make a lunch with it so I came up with a delicious, simple, low calorie, low fat, recipe any one can make with just 4 ingredients.

The Salmon Creations® Mango Chipotle is only 80 Calories and packed with 13 grams of protein.

I found this awesome flatbread called Flatout.  I chose the 5 Grain Flax Folded Flatbread which is a low calorie, high protein, high fiber flatbread.

I added some avocado.  Avocado has so many health benefits such as helping with digestion and weight management.  This fruit has healthy fats but is high in calories so serving size is important.

I suggest eating in moderation.  I used about a 1/4-1/2 of an avocado.  I was a little heavy handed as avocado is one of my weaknesses but 1/4 is a good serving size.

I added some beautiful mango and had myself a beautiful Salmon Mango Chipotle Sandwich.

Again, I take into consideration that mango has a lot of sugar in it, so a 1/4 of mango is the perfect serving size.

It’s fun to get back into trying new foods but I always consider serving sizes other wise I lose track of how much I am eating.  Eating the Smart For Life cookies as snacks helps me with portion control.  Eating healthy is a lifestyle.  Shaking it up with Starkist was a fun change!

  1. I’ve only had fresh, grilled salmon. I’ve never had it canned. This looks interesting and I’m willing to try everything once. 😉
