Fourth of July Low Carb Vanilla Cupcakes
Fourth of July is a time to celebrate America’s independence, and what better way to do that than with some delicious Keto cupcakes? These Fourth of July cupcakes are made with coconut flour and topped with patriotic, Keto frosting. Who doesn’t like vanilla cupcakes? They’re the perfect low-carb treat for your holiday gathering!
The ketogenic diet is a high-fat, low-carbohydrate way of eating that has been shown to promote weight loss and improve health. When done correctly, it can be a great tool for managing diabetes, improving mental clarity, and more.

The Cake (Or Vanilla Cupcake) Mix
I used Keto Queen Kreations; a low carb (1 net carb), sugar free, cake mix. It’s super quick and easy and all you have to do is add butter, vanilla extract, milk and eggs
I’m not a baker, but I play one on T.V. Just kidding.
Seriously, I’m not a baker and I like to cut corners. But I like to make stuff that looks like it was professionally made. So, I found a Keto baking mix.
I typically like to make my own Keto frosting, either buttercream frosting or cream cheese frosting. But with such a busy life, working on call during the day and taking care of two boys, I also got the frosting mix.
The cool thing about these frostings on Etsy is that you can have different Keto sprinkles added or different colors.
Ingredients For Keto Cupcakes:
- 1 Keto Queen Kreations Yellow Cake Mix
- 4 Eggs
- 1/2 Cup Butter, Melted
- 1 Cup Unsweetened Non-Dairy Milk
- 1 Tsp. Vanilla Extract
- 1 Funfetti Keto Frosting Mix
For the Low Carb Cupcakes Frosting:
- The Sprinkle Company Funfetti Keto Frosting
- 2 1/2 sticks Butter
- 2 tablespoons of milk or nut milk (like almond milk)
- 1 Tsp. Vanilla
For Traditional Keto Cream Cheese Frosting
If you don’t want to use a mix, you can make your own icing. All that you need for icing is 1 stick of butter, 8 ounces of cream cheese and 2/3 cups of Erythritol and half a teaspoon of vanilla. Mix in mixture and your done.

Steps for Vanilla Keto Cupcakes
- Mix Kreations mix (dry ingredients) with wet ingredients: eggs, non-dairy milk (almond milk), vanilla and butter in your hand mixer in a large bowl
- Preheat oven to 350 Degrees
- Pour cupcake batter into cupcake liners in muffin tin (or muffin pans)
- Put into the oven and bake
- Let them cool completely
- Mix frosting with butter
- Put them on a wiring rack to cool
- Add frosting (using a frosting tip and frosting piping bag) and sprinkles
Steps for Keto Delicious Buttercream Frosting
- Pour the The Sprinkle Company Funfetti Keto Frosting into a small bowl
- add 2 1/2 sticks Butter
- add 2 tablespoons of heavy cream, milk or nut milk (like almond milk)
- add 1 Tsp. Vanilla
- mix with hand mixer or food processor
You can also use this mix to make cream cheese frosting

Instead of using traditional sprinkles made out of palm oil, sugar, and corn starch, I ordered some Keto Sprinkles from Etsy.
There you have some much healthier sprinkles for your cupcakes!
The cupcakes are so moist and easy to make. The Icing can be done while they are baking! That’s why it only takes about 30 minutes total. It just takes 5 minutes to add the icing and sprinkles when the cupcakes cool.

The great thing about Keto recipes like these is that the powdered sweetener is already built into the mix. I am not great at measuring sweetener. I’m not great at baking, especially Keto recipes, so this is an easy way to do it.
