Girl Scout season is has come and gone. It’s a sad day for some people, but not me. The hustle and bustle of cookie sales has over welcomed it’s stay with me as I cannot stop stuffing my face with Samoa’s. Sa – Mo -Whoa is me!
So, I figured out a way to get rid of them. Eh hem, I mean- give beautiful Valentine’s Day cookie Pops. We love making DIY Valentine’s Day sweet treats and giving them as Valentine’s Gifts.
Valentines treats are my favorite part of Valentine’s Day. Girl Scout cookie pops are really easy to make. They make great gifts too.
Most of the time, you will find cookie pops made with sugar cookie dough rolled into a cake ball. But these cookie pops are even easier to make.
This is a simple 3 ingredient recipe for Valentine’s Cookie Pops using Girl Scout Cookie Thin Mints. It’s really just two thin mints with chocolate or vanilla inside and a lollipop stick wedged in there. Dip them in melted chocolate, white chocolate or candy melts. Add gold spray and sprinkles for a finishing touch .
Ingredients
- Girl Scout Cookie Thin Mints
- melted chocolate
- gold cooking spray and sprinkles
Directions
The melted chocolate or candy melts should be placed in a large bowl and put in the microwave for a minute at 50% power and check at 30 second intervals. Take two thin mints and add melted chocolate inside them. These look like Oreo cookie pops.
Once cooled a little, take lollipop stick and slide it inside the middle of the cookie. When completed set, dip cookie into melted chocolate and add sprinkles or spray gold.
Place them on wax paper on a baking sheet to cool and put them back in the refrigerator.
You can either gift these cute Valentine’s Day sweet treats or use them for decoration (yeah, right. Good luck with that!). These Girl Scout Thin Mints inspired cookie pops are yummy! Yummy in my kids tummy, that is.

See, there is a method to my madness. I personally do not like sprinkles. Yep, your heard that right. I DON’T LIKE SPRINKLES! Therefore, if I add sprinkles to anything, I will not eat it.
So there you have it. I found a way to get rid of the devil (I mean, Thin Mints).

Ingredients
Instructions
- Heat up candy melts in microwave.
- Take two thin mints and make into a "oreo type" sandwich cookie
- add lollipop stick
- Put in the freezer for five minutes
- Heat up another color of candy melts
- Take out of freezer and cover with candy melts
- add gold spray and sprinkles
- take an egg crate and punch holes in it to place the pops upright.and put into the refrigerator
