Every single Christmas, since I can remember, my mother made these snowballs. She made them for her friends, people at church, coworkers, and of course, us. They were such a big hit, people still talk about them. I always thought that they were complicated to make because they are so delicious. So I never asked for the recipe. Plus, I knew she was going to make them, haha.
Now, 30+ years later, if you asked my mother if she thought she would be baking her Snowballs for grand kids, she would fall over.
It just wasn’t in the cards.
It wasn’t really even discussed when I got married. But then the big 40 hit me and I wondered if there was more to life than a dog on Prozac and two cats.
The coffee mug says it all. I am blessed.
So here I am passing down the recipe to my own children and we are making our own Christmas memories. Who knew? Not Nana! haha
It turns out that this is a really simple recipe. I only used five ingredients!
Make sure you the pecans are grounded. I use my Nutribullet.
Roll into little balls – should make 4 dozen. We experimented here to make snowmen. But they came apart once taken off the baking pan.
- 1 cup butter
- 1/4 cup sugar
- 2 cups pecans- grounded
- 2 cups sifted flour
- Powdered sugar
- Cream butter until softens
- add sugar, pecans, flour and mix well
- shape into little balls
- bake at 300 on an ungreased baking pan for 45 mins
- when taking them out of the oven, immediately roll them in powdered sugar
- let them cool and roll them again in powdered sugar
