I love waffles. Big, fluffy waffles. But I can’t make them AT ALL. I also love chocolate, coconut and raspberries together. The problem is time. I never have time to cook and tend to talk myself out of it because I have this unrealistic goal of making them from scratch. I’d also like to pick the raspberries fresh off the vine. I can’t do that either, lol. But I can, however make cocomocha raspberry waffles that look and taste like home made. I’m up for it, are you?
Let’s focus on the main item here. Waffles. It’s all about the waffles. You don’t need to make them from scratch to have “made from scratch” taste. The Eggo Big and Fluffy Waffles are perfect for this recipe. They mimic the original home made waffle.
Now, let’s make it decadent, because that’s how I roll. I am always watching my diet but when I’m up for splurging, I make sure I do it the right way, starting with Eggo Big and Fluffy Waffles and just a few delicious additions. What makes this a little different from the original waffle is that I don’t use maple syrup, I use home made raspberry syrup.
My favorite ingredients are raspberries and coconut. Why not put them together?
Add some chocolate syrup and whipped cream and your all set. Just add a little water to the raspberry syrup in the nutri bullet with sugar and lemon and your set with your raspberry syrup.
- Coconut flakes
- Lemon (!/2)
- Whipped Cream (I use Cabot in a can)
- Hershey's Syrup
- Eggo Extra Fluffy Waffles
- To make raspberry syrup, blend raspberries in a nutri bullet (about 1/2 the box) with lemon juice and a tablespoon, of sugar (or less for taste)
- Toast waffles
- Add whole raspberries, Hershey's Syrup, coconut flakes and whipped cream
Sandwhich the raspberries, coconut, and chocolate syrup in between two waffles and there you have your decadence.
