How to Make A Mini Victoria Sponge Cake
June 20, 2017

This is a sponsored post for Stash Tea.  However, all opinions expressed are my own.  I love a good cake.  But the calories must be worth it these days, as I am on a diet (the story of my life).   I am a "Brit" as they say.  But I'm half British and half Greek and while I do like some of the British food, I tend to lean on enjoying Greek food more. So, when I find something that is British that I love, like a Victoria Sponge Cake, I must share it.  I feel like I would be doing my readers a disservice by not sharing it. The Victoria Sponge was the favorite sponge cake of Queen Victoria, and has become a famous British tea-time sponge …

How I Survived Mother's Day Brunch
May 17, 2017

I love reading all the funny stories online about Mother’s Day and how Mothers all around the world spend the day that celebrates the most unpredictable and most rewarding job of their lives. Some want to be alone at a Spa and have quiet time all to themselves, free of any diaper changing, LEGO building, princess tea parties.  Some want to simply take a hot shower for longer than five minutes.  Some want to spend the day with their kids after having breakfast in bed.  And some like to go out to brunch.  I like to go out to brunch. I can hear the gasps through this post.  "Why, oh why would you want to subject yourself to that?" you might ask. For one day out of the …

Bird Nest's For Easter Treats
April 9, 2017

Everyone is getting ready for Easter and I'm still creating Easter treats, lol.  You know me, Betty Crocker.  I just love making holiday treats.  These nests are a little different from the Florida nests. Why? Because they are from up North.  Notice that they are white, which means they are covered in snow.  I might do some Florida nests too, but I didn't have any milk chocolate or dark candy melts, lol. Here is the recipe.  But I warn you, they are yummmmmmmy. [amd-yrecipe-recipe:12] They are cute for Easter decorations or Easter baskets.  The best thing is that they are colorful and tastes yummy. If your looking for a fast treat (for example, school parties), these nests are so cute. I'd love to know how it works out! Or make sure …

How To Eat Healthy On A Busy Schedule
March 18, 2017

Life is busy, whether your a mother or not.  Snacks are a big business and when you have kids, their snacks become your snacks.  Before you know it your living off of animal crackers, lol. Our busy lives force us to make bad decisions sometimes.  I have been working on this ever since I had children.  My struggle for balance is a daily challenge.  Eating sensibly is one of those challenges. We all want to find a better way to eat.  But does it have to be complicated to be healthy?  Sometimes it seems like a lot of work.  I weigh my food for portion control and count my macros.  I use an app to keep track of all my meals.  They have to be cooked fresh.  …

Realtree Coffee MAX - Get Your Double Caffeine On!
March 17, 2017

Some days I really need a boost.  Most days I have three cups of coffee.  I try to cut down to two but always end up going back to three cups of coffee.  It's not just about the boost either, it's about taste and the comfort I get from sitting down and relaxing with my mug.  It might only be for five minutes, but it's something I look forward to three times a day. Because being a mom is tiring.  Being a forty-six-year-old mom to two boys under five is just exhausting.  It's worth every second, but it's truly exhausting. Sometimes I don't have time for my second as I'm rushing through the day and then the window of time for me to have my last cup …

How to Make a Nonalcoholic Chocolate Coconut Tiramisu
March 15, 2017

It's no secret that I love my sweets!  I also love anything creamy and chocolatey.  I've always wanted to make Tiramisu but I assumed it was too hard to make. Not so! I did some research and testing, lol, and I came up with a fabulous recipe for Tiramisu with a twist.  I added Java Factory Single Cup Coffee in Choconut, a delicious chocolate, coconut flavored coffee. It is one of the easiest recipes I've ever made!  Unbelievable!  And I've been missing out all these years...haha Check out my recipe [amd-yrecipe-recipe:10] The best part of this recipe is the flavored coffee used to soak the ladyfingers.  Make sure you have a Keurig and only use one single serve cup of Java Factory Single Cup Coffee in Choconut.  To make it stronger, …

How to Make a Salted Caramel Pecan Crunch Ice Coffee
March 8, 2017

I drink coffee every day.  Usually, a simple coffee with creamer will do the trick.  But sometimes I like a really extravagant coffee.  When I'm in the mood for ice coffee, I usually go all out. I love salted caramel and whipped cream.  Throw in some nuts and crunch and I've got a delicious ice coffee. It's either all or nothing.  I don't do boring. So, I came up with a recipe for delicious home made ice coffee. The most important ingredient is Java Factory Da Bomb Single Serve Extra Bold Dark Roast Coffee.  It's double caffeinated!  Whoohoo!  This is perfect for an ice coffee because it's stronger and even if the ice melts it, it still has a kick! [amd-yrecipe-recipe:9] To grind the pecans and parlor perfect topping, use …

Fasalakia Freska (Greek Green Beans and Potatoes)
February 18, 2017

Picture this: Athens, Greece, 1979.  I've had a long day at the local beach with my cousins.  We come home, eat some watermelon and have our siesta. Around four pm we are woken up by the aroma of my Yia Yia's cooking.  It is the best smell ever, the kind that lingers throughout the house.  I could hear her telling the dogs to get out of the kitchen while they were at her feet hoping for food to fall. Us kids would sit around the table in the kitchen and eat, always with a salad, feta cheese, kalamata olives and fresh bread.  These memories are the best memories of my life.  My Yia Yia never knew this, but I am extremely grateful that she taught my mother how …

How to Make Homemade Cranberry Nut Granola

I love granola.  I've tried so many varieties and the one I like the most is the First Watch Granola.  The thing is that it's gets expensive buying it from a restaurant just to use for your yogurt!  So I decided to make my own. It was so delicious I thought I'd put it in mason jars and give it as gifts.  So now I have to make more! haha. There's nothing better than getting a gift that is made from the heart. It's such a simple way to give something special and tasty too!  All I did was make granola and put in in mason jars.  I cut out a circle of fabric and wove it into the lid.  Then I just a put a ribbon …

Indulging On Valentines Day
February 10, 2017

For myself, I know that whenever a holiday comes up it triggers my eating patterns.  I want to celebrate.  In my mind celebrating means indulging.  But the problem is that it doesn't stop on the holidays.  It sets me up for bad eating habits.  Then I slowly get back into my unhealthy eating patterns.  I feel bad physically and emotionally and the cycle starts over. Whoa is me... But I found an easy solution to indulge without feeling all the guilt. And it's chocolate!  I can't live without chocolate.  Dr. Sass does not shy away from putting it in his cookies and protein bars.  Perhaps that's why I keep going back, lol. Smart For Life just came out with Chocolatey Protein Coins to satisfy my sweet tooth.  …

Brooklyn Beans Boardwalk Blend Coffee Single-Cup Coffee
February 4, 2017

Lately, I've been trying to cut down a little on coffee.  By cut down, I mean go from drinking three sixteen ounce cups of coffee a day to one sixteen ounce cup and one-two ten ounce cups. Sounds like I have it under control, right? lol Drinking the single serve coffee is what's helping me do that.  My Keurig only allows the pod to brew up to ten ounces. I suppose I could brew two single serve coffees at once, but then I think I might have to enter a 12 step program for my addiction to coffee. Brooklyn Beans Roastery has the best single serve cups of coffee because they have such a variety.  With different flavors and types of roasts, I have a lot to choose from.  …

How to Make A Holiday Chocolate Mint Coffee

Now, 30+ years later, if you asked my mother if she thought she would be baking her Snowballs for grand kids, she would fall over. It just wasn't in the cards. It wasn't really even discussed when I got married.  But then the big 40 hit me and I wondered if there was more to life than a dog on …

How to Get Your Kids To Eat Healthy Snacks

How to Spice Up an Egg White Omelette

Since being on the Smart for Life diet, I have learned how dangerous salt can be for your body.  Using spices and other means of flavoring can take the place of salt and add such a difference to a dish. This is one of those recipes.  Feel free to modify.  Sometimes I add ham, sometimes peppers.  There are so many options when making an egg white omelet. But the point is to keep on …

How to Make Whole Wheat Almond Butter Pancakes

Sometimes my kids want pancakes for dinner.  I try not to limit them too much with food.  I prefer that they eat a healthy dinner but I also want to be flexible and let them have a say too.  So I figured out a way to make healthier pancakes.  Yes, they still have sugar.  But they are still healthier than the average pancake.  Whole wheat flour is more dense that white flour so these pancakes are more filling. I managed to sneak some protein in there too, lol, using Trader Joe's Creamy Almond Butter. It took about ten minutes to make and I let them participate. How To Make Rainbow Pretzel Goody Bags With 3 Ingredients

But the first celebration starts at school.  We had cupcakes and goodie bags.  However, I really don't like putting candy in goody bags.  Kids are so used to getting candy and I wanted to do something different.  Being  the over ambitious mother that I am, I thought I would do two goody bags.  I made one with left over toys from previous parties and one with rainbow pretzels.     You have to think quick when you have a small class of mostly girls.  At the same time you want to please the …

Brooklyn Bean Roastery

I love my Keurig.  I mean I really really love it. I drink about three cups of coffee a day.  Sometimes four!  When you have two boys under the age of four, coffee becomes your best friend. I like all types of coffee, but I prefer caffeinated.  Sometimes I'll spike it with decaf because I know I've had my limit.  One flavor that I like sometimes is hazelnut.  I like nutty flavors so I enjoyed the Brooklyn Bean Roastery Hazelnut flavor.  It is not a very strong coffee and the nuttiness gives it a little sweetness.  I would probably choose it as my second or third cup of coffee for the day. Brookly Bean Roastery Hazelnut is 100% Arabica coffee with their lightning fast "Roast2Cup" packaging process.  …

He can be a difficult eater and it only takes one thing or one word to put him off food.   So I had to tread lightly. There are so many reasons why he or any other four year old might not eat his food such as;  it has the wrong color, it's "smooshy," it's furry, it's slippery, it's smells, and lastly, my favorite "I just don't like it," even though he's never tried it. McDonald's is Making Healthy Changes to Their Menu!

This is a sponsored post, however, all opinions are mine. I am so excited about the changes on the McDonald's menu! Specifically, the chicken McNuggets.  Did I mention that they are delicious? Now, I can feel confident that my kids are eating 100% white meat and no artificial preservatives, colors or flavors. They have modified the salads too, replacing iceberg lettuce with fresh romaine, and adding baby spinach and baby kale. Promo Us mamas know that our children's health is our number one concern. That's why we pay such close attention to what we feed them. Sometimes after a long day, we need a quick meal, but we also don't want to feed our children foods that contain harmful and artificial ingredients. We recently had a chance to sit down with …

I made my own purees and froze them; but it's messy, and time consuming.  So I would often just grab food pouches at the store for convenience.  The problem with these pouches is that they are often highly processed, even the organic ones. This is why Pure Spoon, a mom-owned start-up from Austin Texas, is …

Why Acai-Pomegranate Appetite Suppressing Concentrate Drops Will Help You Drink More Water

When I went on the Smart For Life diet I was told that I had to drink water.  That it was key to losing weight and boy were they right!  When I didn't drink enough water I was bloated and lethargic.  Water cleans out your system, pushes everything out.  It hydrates the body and flushes out toxins.  It's really important to drink water.  But sometimes knowing that isn't enough for me to do …

How To Make Litehouse Blue Cheese Buffalo Chicken Naan Flatbread
