Last year our family traveled to Arizona to spend the Holidays with my parents. The kids love it and they usually get to see snow in the mountains. Here in Florida, there’s no chance of seeing snow. They are a little bit sad about not returning this year but as we are moving there next year we thought we would stay for our last year in Florida. So, as we are staying in town for the Holidays, it still means parties and festivities galore! Will there be pines trees and snow outside? No! But we can bring the celebration to other people’s homes.
I love celebrating and bringing food to parties. I like to use simple, great tasting ingredients like Louis Kemp® Crab Delights® Flake Style. Crab Delights are a good source of protein and low in cholesterol. They are also gluten-free which is convenient in today’s world where everyone has their specific food allergies and dietary restrictions. This is also why my nachos are cheeseless.
Party platters bring people together and I found a way to make something festive and fun using low calorie Crab Delights which allows more room for dessert!
This is a simple recipe, yet festive and fun.
If you want to make your own guacamole, you’ll need a couple of avocados, lemon, cilantro and red onion.
The scallions are garnish for the nachos. Just use a blender. Add chili powder to taste as needed and just a little red onion.
Place guacamole in a sandwich bag. You will snip the corners later.
You will need yellow peppers, cilantro, scallions, Crab Delights, salsa, sour cream (also in a sandwich bag), and jalapeno peppers.
Don’t forget the tortilla scoops!
Empty the Crab Delights to add to tortilla scoops.
I use Crab Delights because they are made with premium Wild Alaskan Pollock fillets.
You can find them at your local Target.
Place tortilla scoops in a circle and add pieces of the crab in the cups.
Strain the salsa so it doesn’t make the tortilla chips soggy and add a little scoop into cup.
Place one piece of yellow pepper and one piece of spring onion.
Stack more on top minus two and repeat.
Stack more on top minus two and repeat until it looks like it’s forming a pyramid. The idea is to mimic a Christmas tree. Get your sour cream and guacamole gives the illusion of a garland and garnish with cilantro and chopped jalapeño peppers.
Then take single cups and use the remaining crab and ingredients to make smaller scoops.
Some people don’t like to pull apart the work of art first, so they can just take the little scoops first. After they realize how delicious this is, they will dive right in!
I added red pepper flakes for a festive look. Get the full recipe below.
- 1 8oz bag of Louis Kemp® Crab Delights® Flake Style
- 2 Avocados
- sour cream
- 3 Spring Onions
- handful of chopped yellow peppers
- handful of red onion
- bag of tortilla scoops
- handful of cilantro
- jalapeno peppers
