Sometimes you want something sweet. Like now! The Keto diet gives you lots of options to satisfy your sweet tooth, including cupcakes.
Making keto cupcakes can be a little time consuming so I found a way to “get ‘er done!” Cupcakes, sprinkles and icing! All in less than 30 minutes!
All I had to add was one stick of butter, 8 ounces of cream cheese and four eggs. I made 12 cupcakes in a silicone mold and baked at 350 for 25 minutes.
All that you need for icing is 1 stick of butter, 8 ounces of cream cheese and 2/3 cups of Erythritol and half a teaspoon of vanilla. Mix in mixture and your done.
So, how do you make sprinkles for keto cupcakes? Well, instead of using traditional sprinkles made out of palm oil, sugar, and corn starch, I took some unsweetened coconut and mixed it with a little food coloring.
There you have some much healthier sprinkles for your cupcakes!
The cupcakes are so moist and easy to make. The sprinkles and icing can be done while they are baking! That’s why it only takes about 30 minutes total. It just takes 5 minutes to add the icing and sprinkles when the cupcakes cool.
